To make the sweet potato fries: preheat oven to 425°F. Slice potato lengthwise in small strips and place them in a large mixing bowl. Add olive oil, garlic powder, parsley, salt and pepper and mix until everything is coated. Place in a single layer on a parchment paper lined baking tray and bake for 25 minutes. Remove and transfer to a wire rack to cool slightly.
Slice everything Pagel in half and toast. Spread horseradish evenly on two halves. Top bottom half of pagel with roast beef, then provolone. Place in broiler for a few minutes to melt cheese then top with remaining half of toasted pagel, enjoy!
