Fluffy Scrambled Egg Sandwich

Fluffy Scrambled Egg Sandwich

Ingredients:

  • 1 Everything Pagel

  • 2 free range eggs
  • 3 tbsp butter, divided
  • Sprouts, microgreens and hot sauce for serving

Directions:

  1. Preheat medium nonstick skillet over medium/low heat and add 1 tbsp butter.
  2. In a small bowl, mix together eggs until whisked completely.
  3. Split Everything Pagel in half and toast to desired doneness.
  4. Add beaten eggs to the pan and stir continuously. When eggs start to take shape, add 1 tbsp butter and continue stirring eggs. 
  5. When Pagels pop up from toaster, butter each side with last 1 tbsp of butter.
  6. Just as the eggs fully take shape, remove from pan and place on bottom half of toasted Pagel. Top with microgreens and hot sauce. Enjoy!
