Avo Rose on Toasted Everything Pagel

Ingredients:
1 Everything Pagel, sliced in half and toasted
2 tbsp Kite Hill Vegan Cream Cheese
½ small Ripe Avocado, skin removed
Sliced Red Onion
Freshly Cracked Pepper
Directions:
Slice Everything Pagel in half and toast.
Spread 1 tbsp vegan cream cheese on bottom half of toasted everything pagel. Sprinkle red onions on top of cream cheese
To make the avocado rose:
lay the avocado, flat-side down on the cutting board. (skin removed)
With a sharp knife, slice thin slices along the short side, all the way to the end.
Keeping the pieces touching each other, fan the avocado out in a straight-ish line on your cutting board
Starting at the right end, tuck and wrap the avocado into itself in a spiraling motion until you’ve wrapped the whole avocado up into a rose.
Place on bottom half of everything pagel. Spread remaining 1 tbsp vegan cream cheese on top half of everything pagel and smash into a sandwich.
