Triple Berry Pagel

Triple Berry Pagel

Ingredients:

  • 1 Plain Pagel, sliced in half and toasted

  • 2 Large fresh strawberries, sliced
  • 8-10 Raspberries
  • 1 tbsp Lemon juice
  • 1 tbsp Coconut sugar
  • Vegan strawberry cream cheese

Directions:

  1. Slice Pagel in half and toast.
  2. Slice strawberries and set aside
  3. To make raspberry compote: In a small saucepan over medium heat, add raspberries, sugar and lemon juice and stir occasionally until raspberries have broken down and sauce begins to thicken. Remove from heat and let cool a bit.
  4. Spread strawberry cream cheese on each half of the toasted pagel, top with fresh strawberries and then with cooled raspberry compote. Enjoy!
