Bacon 'N Egg Scramble Topped Pagel

Bacon 'N Egg Scramble Topped Pagel

Ingredients:

  • 2 Sesame Pagels, sliced in half and toasted

  • 6 Strips bacon  
  • 4 Eggs
  • 1 tbsp Nut milk of choice
  • 1 tbsp Butter
  • ⅛ cup Vegan sharp cheddar cheese
  • Sea salt and pepper

Directions:

  1. Preheat oven to 400 degrees
  2. On a baking tray lined with aluminum foil lay bacon flat on a single layer and do not overlap. 
  3. Bake for 15-18 minutes until bacon is done and crispy. Remove to a paper towel lined plate. Once dry and cool, chop into small pieces.
  4. Set a medium fry pan over medium heat. Crack eggs in a bowl, season with salt and pepper and add the milk.
  5. Melt butter in fry pan and add the eggs. Stirring the eggs around continuously, cook for a few minutes until mostly set. Turn heat to low, add cheese and cover until cheese is melted. Mix in bacon and serve on toasted Pagels. Enjoy!
