On a baking tray lined with aluminum foil lay bacon flat on a single layer and do not overlap.
Bake for 15-18 minutes until bacon is done and crispy. Remove to a paper towel lined plate. Once dry and cool, chop into small pieces.
Set a medium fry pan over medium heat. Crack eggs in a bowl, season with salt and pepper and add the milk.
Melt butter in fry pan and add the eggs. Stirring the eggs around continuously, cook for a few minutes until mostly set. Turn heat to low, add cheese and cover until cheese is melted. Mix in bacon and serve on toasted Pagels. Enjoy!
